2 Tbsp olive oil
3 tbsp unsalted butter
1 lb boneless skinless chicken breast
1 onion
3 garlic cloves
3 cups baby spinach
4 oz sun-dried tomatoes in oil drained
2 cups heavy cream's
1 c Parmesan cheese
1/2 lb penne pasta
Salt and pepper to taste
Step 1)Season the chicken
Step 2)Fill a large cast-iron skillet with the olive oil and cook both sides of the seasoned tenders over medium-high heat
Step 3)Add 1 onion (diced) when chicken is almost cooked
Step 4)Chop the chicken and set aside
Step 5)Set them aside to cool
Step 6)
Step 7)Sauté the butter minced garlic sun-dried tomatoes and spinach over medium heat
Step 8)Once the spinach has wilted add the cream and let it come to a simmer
Step 9)Remove from heat and add the salt, pepper and grated Parmesan cheese
Step 10)Add chicken and pasta in the sauce with just a slash of pasta water
Step 11)Give it a quick stir and serve.
