2 Tbsp olive oil
3 tbsp unsalted butter
1 lb chicken thighs
1 onion
3 garlic cloves
4 oz sun-dried tomatoes in oil drained
2 cups heavy cream's
1 c Parmesan cheese
1/2 lb penne pasta
Cajun seasoning
Salt and pepper to taste
Step 1)Season the chicken
Step 2)Fill a large cast-iron skillet with the olive oil and cook both sides of the seasoned tenders over medium-high heat
Step 3)Add 1 onion (diced) when chicken is almost cooked
Step 4)Sauté the butter minced garlic and sun-dried tomatoes
Step 5)Add the cream and let it come to a simmer
Step 6)Remove from heat and add the salt, pepper, Cajun seasoning and grated Parmesan cheese
Step 7)Serve over rice or mashed potatoes
