Season the chicken
Fill a large cast-iron skillet with the olive oil and cook both sides of the seasoned tenders over medium-high heat
Add 1 onion (diced) when chicken is almost cooked
Sauté the butter minced garlic and sun-dried tomatoes
Add the cream and let it come to a simmer
Remove from heat and add the salt, pepper, Cajun seasoning and grated Parmesan cheese
Serve over rice or mashed potatoes
