Broccoli and Cheese Stuffed Chicken Breast

Ingredients

Chicken Breasts: Go for large and ideally free range/organic.

Olive Oil: Divided

Seasoning: Onion powder garlic powder paprika salt and pepper.

Broccoli: chopped into small pieces.

Cheese: Cheddar and cream cheese.

Garlic: Freshly minced for the strongest flavor.

Salt & Pepper: To taste.

Directions

Step 1) Preheat the oven to 375 degrees.

Step 2)

Step 3) Combine the salt pepper onion powder garlic powder and paprika in a small dish. Drizzle the olive oil over the chicken breasts. Rub the seasoning mixture on the chicken and coat entirely.

Step 4)

Step 5) Combine the filling ingredients in a bowl. Set aside.

Step 6)

Step 7) Cut out a wide pocket in each chicken breast, being careful not to cut all the way through.

Step 8)

Step 9) Stuff each chicken breast with the filling.

Step 10)

Step 11) Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

Step 12)

Step 13)Once heated sear the stuffed chicken breasts on each side, but don’t cook through.

Step 14)

Step 15) You may need to do this in two batches depending on the size of your chicken breasts.

Step 16)

Step 17)Place all 4 breasts in the skillet and transfer the skillet to the oven.

Step 18)

Step 19)Bake for 25-35 minutes until the chicken breasts are cooked through.
